Description

Our organic wormwood hydrolate for foods comes from the leaves of the plant bearing the botanical name Artemisia absinthium. The product is known as White Wormwood organic hydrolate for food. According to modern botanical classification, the species belongs to the Asteraceae family. The plantations occupy regions of Bulgaria, from where the raw material is sent for processing. The organic crop occupies fields in the country and grows without synthetic agents against pests and without artificial fertilizers applied to the soil beneath it. The cultivation regime keeps the plant tissue clean until the day of harvest at the beginning of the season. The harvested mass undergoes steam extraction soon after harvesting. The steam passes through the leaf tissue and carries the mobile aromatic molecules to the aqueous phase throughout the entire extraction of the raw material gathered from the fields. The larger and heavier compounds are retained in the residue, which is why the aqueous distillate acquires a light course and remains free of sediment heaviness in the finished liquid. The aromatic sequence begins with a spicy tone, continues with an herbal one and ends with a sweet note. Its strength remains at a medium level. Only a small part of the coloring substances of the leaves passes into the water, which is why the tint of the distillate stays between colorless and light amber. The transparency of the liquid is evident when viewed against the light. The composition fully retains its organic character and remains free of preservatives and colorants. The pure composition links the aromatic sequence solely to the harvested plant mass and to the environment in which it grew on the fields. The glandular hairs on both surfaces of the leaf blade collect the aromatic fraction while still in the plant, before the harvest is gathered. In addition, the ducts along the vascular bundles take up part of the same fraction in the tissue of the leaf blade. The harvested leaf mass sets the spicy herbal sequence in the organic wormwood distillate.

Application
Hydrolate from wormwood leaves is used in cooking as a flavoring ingredient for a wide range of savory recipes. It is suitable for salad dressings, vegetable marinades and various sauces, to which it gives a light bitter nuance and herbal depth. In cream soups and cold soups it adds a refreshing accent, and in dishes with rice, quinoa, bulgur or millet it contributes to a fine aromatic balance. It pairs well with baked, braised and steamed vegetables, including potatoes, zucchini, eggplants, peppers, cauliflower, broccoli, asparagus, pumpkin, corn, spinach and root vegetables. It can be added to dips, appetizers, spreads and sandwich pastes, as well as to vegetable purees and creams, where it softens the taste and adds a delicate grassy tint. In dishes with legumes such as lentils, chickpeas, beans, green beans and peas, it emphasizes their natural character and brings freshness. It is also appropriate in savory baked goods, bread products, crackers and savory biscuits, as well as in fillings for pastries, mushrooms, peppers and vegetable rolls. In pizza sauces and in the pizzas themselves it leaves a discreet herbal note, and in casseroles, stews and oven-baked dishes it complements the overall aromatic composition. It is also used in cold and hot starters, side dishes with couscous or rice and various salad mixes.
