Description
Our organic rosemary hydrolate for foods comes from the species Rosmarinus officinalis. The liquid is offered under the name Rosemary organic hydrolate for food. The scent owes its purity to steam distillation, in which the water takes up only the light volatile compounds of the entire aerial mass of the plant. The plant belongs to the Lamiaceae family, whose members store aromatic substances in the aerial stalk and in the leaf cover, but not in the root. The aerial part is processed, and the peltate glandular trichomes preserve the volatile fraction in an extensive secretory cavity. The high strength of the aroma comes with a light spiciness and a bitter nuance at the end. The tone lies between colorless and barely perceptible pink in every part of the volume. In Bulgaria, the plantations follow organic rules and grow without chemical agents. Organic care maintains the balance between the volatile constituents and lets no foreign residues into the raw material used for the extraction of this distillate. In addition, the liquid takes in neither preservatives nor colorants. At the forefront of the described compounds are cineole, pinene and camphor, which is why the spicy side comes forward right at the beginning of the olfactory sensation. The clarity remains the same in every part of the volume. The spicy line comes first, while the bitter one emerges later and closes the olfactory picture. The absence of additives leaves the aerial stalk as the sole carrier of the olfactory character of this product. Camphene and borneol rank alongside them among the volatile compounds of the raw material. The stalk origin of rosemary can be perceived in the lasting part of the sensation.
Application
Rosemary stalk hydrolate, obtained by the organic method through steam distillation, is used in food preparation for its characteristic herbal and slightly spicy taste. The liquid is added to marinades for meat and fish, salad dressings and flavored olive oils for cooking. It is applied in glazes for roast chicken, in soups with an herbal accent and in vegetable creams. It is used in pesto with a rosemary nuance, in risotto with an herbal taste, as well as in homemade broths and culinary sauces. It finds application in bakery products with a fine herbal aroma, in marinated vegetables and in fillings for pizzas and tarts. It is suitable for gourmet salt with a hint of rosemary, for roasted vegetables with a spiced aroma, as well as for dressings with citrus notes. It is also used in sautéing oils, in reductions for meat dishes and in culinary creams with a balanced herbal taste, giving every dish a delicate freshness and a characteristic aroma.
