Description

Our natural Roman chamomile hydrolate for foods is obtained from the plant with the botanical name Chamaemelum nobile. Outside the Bulgarian market, the product is offered under the name Roman Chamomile natural hydrolate for food. The plantations develop on open fields in Bulgaria, and natural farming there completely excludes synthetic fertilizers and chemical agents. Steam distillation keeps the aromatic profile pure, because only the volatile fraction of the processed flower raw material remains in the aqueous phase, without traces of solvents. The raw material comes entirely from the inflorescences of the plant. In the cultivated forms, part of the tubular florets turns into a ligulate form. The inflorescences also determine the tonality of the aqueous phase, which is why the liquid lies between pale blue and gray-green depending on the pigments of the raw material of the distillate itself. The density remains light, and the liquid itself appears clear throughout the entire volume. The Asteraceae family includes herbaceous genera in which numerous small florets occupy a single common receptacle. The soft level of the scent remains unchanged in the distillate. The grassy thread runs beneath the sweet and fruity-floral directions in the overall scent of the distillate. Isobutyl angelate and methylallyl angelate determine the direction of the characteristic aroma of this species. The natural method of cultivation is also reflected in the composition, so the liquid contains no preservatives, colorants or other added substances apart from the aqueous base. Botany also records the species under the name Chamaemelum nobile. In addition, all of the raw material originates from Bulgarian fields with a natural regime. The Roman chamomile distillate finishes with a soft sweetness and a clear grassy echo.

Application
Hydrolate from the flowers of Roman chamomile Chamaemelum nobile, obtained by steam distillation, is used in the production of foods, including refreshing herbal sauces with a soft floral nuance. It is suitable for light salad dressings with a delicate taste, for dessert creams with a balanced profile, as well as for sweet syrups with a fine aromatic character. It is included in marinating solutions with a delicate profile, in jellied desserts with a soft floral nuance, and also in baked goods with a light herbal flavor. It is also suitable for fruit compotes with a delicate aroma, as well as for formulas for flavoring sweet creams and glazes. The hydrolate brings a natural, unobtrusive taste to the final products, which combines well with fruity and floral notes, making it a suitable ingredient for creating light, delicate culinary compositions with a pleasant aftertaste and good tolerability with frequent consumption.
