In international practice, the liquid is designated as Melissa natural hydrolate for aromatherapy. The plant belongs to the Lamiaceae family. The leaves are used for extraction; they grow on stalks, are ovate in shape, end in an incised-toothed margin and widen toward the cordate base. The volatile substances of the leaf blade collect in glandular hairs on the surface, because the plant retains them there until processing. Extraction is carried out with steam, so the scent of the finished distillate stays close to the original leaf material.
