Description
Our organic geranium root hydrolate for foods is obtained from the species Geranium macrorrhizum. The liquid is offered under the name Geranium Root organic hydrolate for food. The Geraniaceae family comprises perennial plants whose rhizome remains in the soil for years and accumulates volatile compounds of a warm character in its tissue. The fleshy rhizome spreads shallowly over the soil surface and stays there throughout the life of the plant, which makes gathering the raw material easier. The harvest comes from organic plantations in Bulgaria. The organic cultivation regime limits the content to water and volatile compounds, which is why colorants and preservatives are completely absent from the final aqueous distillate. Extraction is carried out with steam. The method determines the clean aromatic line, as the aqueous phase retains only the volatile part of the plant's rhizome. The scent rests on a herbal base, to which warmth and a light sweetness are added later. The aromatic strength remains soft throughout the profile. The low volatile content accounts for this soft strength and keeps the scent within a relatively narrow range. The color ranges from light yellow to greenish. The pigments of the underground part give this tone, which is why the plant part used is also evident in the finished appearance of the distillate. The product is a clear liquid, and its aromatic part remains dissolved in the aqueous base of the distillate. In addition, elemenone, globulol and guaiene dominate the volatile fraction of the underground part, while the remaining compounds form only the background of the overall profile. The geranium root reaches its final form as a light liquid with a soft herbal and warm character.
Application
Geranium root hydrolate has a wide variety of uses in cooking and in the production of foods. It is added to herb-based soups, vegetable marinades and salad dressings, where it contributes a soft root aroma and a delicate herbal accent. It is suitable for pasta sauces and ready meals, as well as for dips, hummus and appetizers, to which it lends freshness and a balanced flavor. In confectionery, it is used in the preparation of cake creams, glazes, jelly desserts, ice creams and jams, adding a fine earthy tone and a harmonious finish. The product enriches drinks such as syrups, teas, smoothies, fermented and energy drinks, as well as flavored mineral waters and iced tea. It can be added to baked goods and bread to improve aroma and softness, to muesli, porridges and breakfast cereals, as well as to protein bars and shakes. It also finds a natural place in dairy products and plant-based alternatives, including yogurt, vegan cheeses and spreads. It is further used in nut pâtés, vegan patties, seasoning blends, aromatic vinegars and seasoned oils, and in dietary and gluten-free products it serves as a natural flavoring ingredient.
