Description

Our natural anise hydrolate for foods carries raw material obtained from the species Pimpinella anisum. The product is marketed under the name Aniseed natural hydrolate for food. The product has an entirely natural composition, free of preservatives and colorants. The composition consists only of the aqueous base and the volatile substances dissolved in it, which pass from the fruit during extraction. The volatile substances reach the liquid through steam distillation, which transfers only their water-soluble part. The water-soluble part originates from the fruit, since it is precisely there that the plant accumulates its volatile substances. The plant belongs to the Apiaceae family, whose members are mainly aromatic herbs with small flowers gathered in umbel-shaped inflorescences, characteristic of the entire family. The plants of this family are grown in Bulgaria naturally, without synthetic treatments of the crops and without mineral feeding of the soil. The fruits from these plantations yield a clear liquid whose color lies between colorless and pale yellow. The faint coloration is due to the small amount of coloring compounds in the distillate. The distillate unfolds a scent of medium strength, in which the herbal base passes smoothly into a floral finish. The floral finish remains light, while the herbal base plays the main role in the profile. The profile owes its moderation to the aqueous medium, which absorbs a limited part of the volatile constituents. The moderation goes hand in hand with the purity of the liquid, which follows from the natural origin of the raw material. The anise fruit provides the liquid with its herbal character, and the floral part comes from the same plant source.

Application
Anise hydrolate is used for flavoring a variety of foods, where it adds a delicate herbal nuance with a sweet anise tone. In confectionery, it is used in the preparation of desserts, cakes, biscuits and baked goods, giving a fresh aroma to the dough and to the finished products. It is suitable for flavoring pastry creams, fillings for sweets and glazes, whose flavor profile it enriches without making it heavy. It combines well with chocolate products, sugar confectionery and candy fillings, while in jellies and jams it complements the fruit base with a light herbal note. In the dairy sector, it is incorporated into yogurts, puddings and dairy desserts, and in frozen products it adds a characteristic flavor to ice creams and fruit mousse. It is also used in the production of non-alcoholic and hot drinks, as well as syrups, including those for tea and cocktails, where it provides a distinct anise character. In cooking, it is present in sweet sauces, toppings and dessert dressings, as well as in culinary blends, and it forms a harmonious combination with honey products. It is also applied in decorations for cakes and festive baked goods, contributing to the complete aroma of the finished product.
