Description
Our natural German chamomile hydrolate for foods comes from the species Matricaria chamomilla. It is offered on the international market under the name German Chamomile natural hydrolate for food. Botanically, the species belongs to the composite plants of the Asteraceae family. The raw material comes entirely from the flowering part of the plant. Each flower head arranges white ray florets along the outer circle, while the yellow tubular florets cluster on the hollow conical receptacle in the center. The biseriate glandular hairs on the corolla and the ovary secrete volatile substances, along with the canals that run through the receptacle of the inflorescence. The tubular florets provide most of the volatile fraction of the flower head. The flower raw material leads to the blue color range of the liquid, as chamazulene, whose precursor form is matricin, accumulates in the tissue of the florets. The color ranges between pale blue and dark blue throughout the entire volume. The extraction is carried out by steam distillation. The clear aromatic profile is due to the steam treatment, which is why only the volatile constituents of the flower mass remain in the aqueous phase of this product. The scent remains soft in strength and keeps this level throughout the profile. The sweet and fruity sides hold together, while the warm nuance sets the depth of the overall aromatic character. The product remains clear and homogeneous throughout its entire volume. The fields in Bulgaria provide the entire initial harvest for this product. The plants are cultivated naturally, so the composition includes only the aqueous phase and the volatile substances, without added preservatives or colorants. The blue color range and the soft, sweet scent form the basis of the character of this finished chamomile distillate.
Application
German chamomile flower hydrolate is used in herbal sauces with a delicate floral nuance, suitable for accompanying light dishes. It is used in salad dressings with a fine aromatic profile and in marinades for vegetable dishes, to which it imparts a soft floral accent. It is included in hot and cold soups with an herbal touch, as well as in vegetable purees with an enriched flavor profile. It is applied in tea blends and herbal infusions, as well as in syrups and essences for flavoring desserts and baked goods. It is found in jellies and compotes with a delicate taste, as well as in products for decorating confectionery. It is also suitable for seasonings for home cooking and for flavored vinegars and oils, in which the soft floral character of the ingredient complements the main flavor notes of the recipe. It is also used in light dessert creams and in flavored compotes of seasonal fruits, where it complements the main flavor profile.
